piranha1. those of you who have tried both cilantro and epazote, how similar do they taste? if cilantro tastes like soap to you, does epazote do as well?
2. in the subgenre "cowboys are gettin' it on" of my smut reading, the characters in texas and new mexico often have or make "queso". i used to think queso was just spanish for cheese (which it is), but they're very clearly not making cheese. google isn't very helpful. enlighten me?

on 2008-09-04 13:05 (UTC)Queso can be made with or without meat/beans and at its most basic is a good melting cheese heated with peppers/spices and sometimes small tomato chunks. Queso cheese is the best thing to use, because it melts so nicely, so you can see where the name came from.
The white trash, no where near the West, version we make involves one block of velveeta (I know, I know, but this is the only thing we use it for) and one can of Rotel. Melt in pot, dip with tortilla chips, mmmmmmmmm!
